Diablo Shrimp Surprise

Ingredients:
  • 1 bag, 16 to 25 count, jumbo raw shrimp
  • 16 ounces Cheddar cheese
  • 11 ounce can sliced jalapeños
  • 1 of the hottest peppers you can find: serrano, habanero, etc.
  • Bacon
Preparation:
Thaw, peel and devein the shrimp. Butterfly each shrimp. Open each one up and place on workspace. Grab a slice of jalapeño and lay it in the middle of the butterflied shrimp, on top of the inside of one half. Cut the cheese into thin slices and place the slice of cheese in the shrimp with the sliced jalapeño. Repeat with all of them except for ONE. Grab a couple slices of the hottest pepper you have. Place it into ONE of the butterflied shrimp. You can add cheese if you want to be nice. Wrap each shrimp with bacon. Use toothpick to secure ends of bacon to shrimp. Please remember to take them out when serving! Prepare barbecue pit to medium high. Grill until shrimp are cooked through and the bacon is done, crispy, usually about 10 to 15 minutes. Turn occasionally. Serve. Sit back and wait to see who gets the Diablo Shrimp Surprise! Enjoy.
